A Great Reason To Visit the Durham Farmers Market

Yes…the Durham Farmers Market is just that GREAT…I can’t stop talking about it! If you haven’t been to the Durham Farmers Market this season, I’ve found a great reason for you to go…so you can pick up these ingredients so you can make this yummy Tomato and Mint Salad I found on the Durham Farmers Market website!

Ingredients:

Snag these ingredients at the Durham Farmers Market!

  • 1 large ripe tomato, seeded and diced (about 3/4 cup)
  • 1/2 cucumber, seeded and diced (about 1/2 cup)
  • 2 Tbsp minced red onion
  • 1 clove garlic, mashed
  • 10 leaves fresh mint, finely chopped
  • 1 Tbsp red wine vinegar or lemon juice
  • 2 Tbsp olive oil
  • salt and pepper to taste

Directions: Toss together and refrigerate 1/2 hour to blend flavors.

Pick up your ingredients at the Durham Farmers Market!

The farmers market takes place every Wednesday from 3:30pm – 6:30pm and each Saturday from 8am -noon at the Pavilion in Durham Central Park in downtown Durham.

5-Minute Southwest Layered Salad

You have to try this easy and oh-so-yummy Southwest Layered Salad recipe!

What You Need!

  • 6 cups torn romaine lettuce
  • 1 can  (15 oz.) black beans, rinsed
  • 1 can (11 oz.) whole kernel corn, drained
  • 1/2 cup  Salsa
  • 1/2 cup Cheese Crumbles
  • 1/2 cup  Ranch Dressing
  • 1 cup broken tortilla chips

Make It!

Cover platter with lettuce; top with layers of next 4 ingredients.

Next drizzle with dressing; top with chips! Tadaaaaaaa!!!  That was easy!

Fresh Strawberry Bars

The delicious strawberry topping makes these tender peanut butter cookies a treat for all ages!  ENJOY!

Ingredients

  • 3/4 cup butter, softened
  • 3/4 cup peanut butter
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 eggs
  • 1 tsp. vanilla
  • 2 1/4 cups all-purpose flour
  • 1/2 cup strawberry jam
  • 4 cups small whole strawberries, halved or quartered
